Chewy Oatmeal Raisin Cookies
Here’s a recipe for soft and chewy oatmeal cookies:
Ingredients:
- 1 cup (230g) unsalted butter, softened
- 1 cup (200g) packed brown sugar
- 1/2 cup (100g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 3 cups (240g) old-fashioned rolled oats
- 1 cup (150g) raisins (optional)
- 1/2 cup (60g) chopped walnuts or pecans (optional)
Instructions:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then add vanilla extract.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients until combined.
- Stir in oats, and if using, fold in raisins and nuts.
- Drop tablespoon-sized scoops of dough onto the prepared baking sheet.
- Bake for 10-12 minutes, until edges are lightly browned but centers are still soft.
- Let cookies cool on the sheet for a few minutes before transferring to a wire rack.
Tips:
- For extra softness, slightly underbake the cookies.
- Substitute raisins with chocolate chips for a different twist!
